ABSTRACT

This effect was quantified by measuring the mass flux of

betanine dye between beetroot and the surrounding liquid

under conventional and electrical heating at 100C.[11] Mass transfer of the dye under the influence of the electric field

increased linearly with increasing electric field strength:

where c1 is the constant of proportionality relating the

molar flux, N, to the applied electric field, V, and N0 is

the flux of the dye produced with zero electric field.
