ABSTRACT

Traditional Chinese meat products are famous for their attractive color, strong aroma, and unique taste. They are part of the precious cultural heritage of China as they symbolize ancient Chinese imagination and creativity in meat processing spanned over a long period of time and space. Records have shown that animal domestication and meat processing started in China since time immemorial. Isotope dating on unearthed historical relics in recent years has con‘rmed that wild boar taming in China has a history of more than 5600 years. In addition, archaeological studies on Qujialing ruins in Hubei Province have indicated that poultry farming in China began as early as 4000 years ago.
